I've shown the verse chords that Katie would play at capo7.
She plays bass notes, mostly on the 5th str., with the thumb.
The notes on the back-beat are plucked with the middle two fingers on
2nd and 3rd strings, or 3rd and 4th strings. You have to experiment.

If you don't fancy plucking the chords as Katie does, playing normally
without a capo also sounds reasonably OK, although a standard, first-position 
E-chord does sound a bit too bassy, methinks.
